"PERK" Infused Cocoa Cookies by Ric Orlando
A Mexican Inspired Stoner Treat!
I love chocolate.
I love Mexican spices.
I love cookies.
These make me very happy.
I have made many a cookie recipe that calls for a pinch of chile, and/or a hit of coffee, but these bad boys use PERK.

What is PERK?
It is one of my 6 Flavor Maker Spices. PERK is a Mexican coffee-chile rub that also has other spices and herbs like cloves, canela, Mexican oregano and more. The make these cookies smell and taste like a MOLE PARTY!
Did I mention how easy that are to make?
Here is the recipe.
PERK Cocoa Cookies
1 Cup AP or GF AP Flour
1/2 cup best quality cocoa powder
1/2 tsp baking soda
1 tbls Flavor Maker Spices PERK seasoning
2/3 cup unsalted butter, melted
2/3 cup sugar
1 tsp vanilla extract
Mix the dry ingredients well and set aside.

In the bowl of an electric mixer cream the butter and sugar until it comes together.
Add the vanilla and egg and whip until fluffy.
Add the dry ingredient mix and run the mixer on medium speed. until it comes together.
Form into a ball, wrap in plastic wrap and refrigerate for at least and hour, preferably two.

After the dough has chilled, remove it from the fridge and roll into golf ball sized balls.
Preheat oven to 350F.
Arrange on a baking sheet lined with parchment or a sil-pat about 2 inches apart.

Bake for 10-12 minutes, or until the top have started to crack just a bit. They will be very soft but will firm up when cool.

Once they are baked, while they are still hot, use a fork and gently press then down just a bit. They will have nice cracked tops.
